Food and Beverage:
In the food and beverage industry consistency is key to producing a quality consumer product. To ensure product quality, in-process control and final product testing is of primary importance. It is vital to access the suitability of the raw materials, to control the nutritional quality of the product and to determine the extent of microbial contamination. For example:
Product raw materials may be contaminated with pesticides, hormones, antibiotics, heavy metals or toxins.
In the beverage industry glucose, lactate, ascorbic acid, to name but a few are all constituents that must be adequately controlled to maintain product quality and control batch to batch variation.
In the food industry controlling the amino acid, lipid, protein and vitamin content are of significant interest.
In the brewing or fermentation process ethanol concentration must be tightly controlled whereas contamination by aldehydes, methanol and sulphites must be identified as soon a possible in the production process.
Microbial contamination (salmonella, E. coli) of finished or on the shelf product is a significant risk to human health and outbreaks of food poisoning traced to a particular product or point of preparation can have deleterious impact on the future viability of the enterprise.
Procedures conventionally used to determine food and beverage quality include chromatography spectrophotometer electrophoresis titration and culture. These methods may require long sample preparation analysis time (some times days) and suffer form selectivity and sensitivity.
However, biosensors when are appropriately designed and functionalised they can circumvent some of the problems surrounding current testing methods and are suitable for use in hazard analysis and critical control points (HACCP) to verify the process under control. In addition to reducing cost, time to result and ease of use, functionalised biosensors suitable for use in this industry have been published illustrating the versatility of this detection platform. MiCRA’s aim is to translate the research into commercial products to assist in the quality control in food and beverage manufacture
